Formal but Easy – Hasselback Potatoes

Hasselback Potatoes are a Swedish style technique where the potato is baked and cut with slits halfway through. This cooking style offers a formal look without a ton of hassle, not to mention, the fine cuts make the outside crispy and delicious! Rosemary & Cheese Hasselback Potatoes

Ingredients:

4 large Thomas Fresh Russet potatoes

4 tablespoons melted butter

1 teaspoons minced garlic

2 tablespoons fresh rosemary

1 teaspoon salt, pepper, and red pepper flakes

Grated parmesan cheese (added before serving, quantity as desired)

Instructions:

1. Preheat oven to 425 F.

2. Thinly slice potatoes horizontally across, stopping just before hitting the cutting board, then place on baking sheet.

3. Melt butter, then add in garlic, spices and herbs. Stir together with fork then brush liberally onto potatoes.

4. Bake for 30 minutes then remove and re-apply butter mixture, ensuring to get between each slice. Sprinkle grated parmesan as desired. Cook for another 30 minutes or until potatoes are golden on the edges and easily poked with a fork.
