Tasty Coconut Breakfast Bowls

We love starting our mornings with breakfast bowls! Not only are they beautiful to look at but they are quite easy to throw together. Breakfast bowls are delicious, loaded with nutrition and make playing around with different ingredients fun!

One of our favourite ingredients to add to our bowls is fresh Cracked Coconut – grated, shaved, sliced – it’s yummy in so many ways. Cracked Coconut may look intimidating with its hard exterior, but the effort it takes to extract the tasty coconut meat is well worth it! Once extracted, the meat can be used for many other applications, like coconut butter and toasted coconut chips. The shavings will last 1-2 weeks at room temperature.

How to Create Coconut Shavings

  1. Break open coconut with hammer and remove the hard outer shell. Peel the soft outer shell with a vegetable peeler. This is the hardest step!
  2. Grate, shave or slice the coconut to desired result. You can also continue to use your vegetable peeler during this step or cut pieces and shred them further with a food processor.
  3. You can skip this step and eat the coconut shavings raw or dry in oven or dehydrator. Preheat oven to 325°F and put coconut shavings on a baking sheet for 5-10 minutes, take the sheet out after a few minutes and stir to ensure even toasting. If you are using a dehydrator, allow 6 hours for toasting to complete.
